So, tonight I was in the mood for something different to eat for dinner. I knew I wanted some sort of pasta dish that would be quick and easy like spaghetti but not spaghetti. I also wanted to incorporate shrimp and a veggie but not in an alfredo way either. Picky, aren’t I? So I decided to try something that I’ve never tried before, shrimp linguine with grape tomatoes in pesto sauce.
It was my first time using pesto sauce so I was a little hesitant but the final result? To die for! Not too bad looking either!
Disclaimer: In no way, shape or form am I an expert. This is just what I did. Feel free to tweak this recipe to your liking!
Directions:
Season pre-cooked shrimp with spices of your choice. I used Old Bay, seasoning salt and pepper.
Fire up a skillet at medium heat. Lightly coat with butter. Add shrimp sautée for 5-7 minutes. Add minced garlic for flavor (optional) and grape tomatoes, sliced in half.
Boil pasta for 8-10 mins or until tender. Remove from heat, drain and add to skillet. Stir in pesto sauce and cook for an additional 5 minutes.
And there you have it. A delicious meal under 30 mins! What’d you have for dinner?
